London based potato skin pop-up Skins is all about loading up potato skins with
the finest and freshest ingredients. They offer potatoes like you have never tasted them
before with a wide range of mouthwatering fillings. From 12

April they’ll be delivering
just that from their brand new home at Magic Roundabout.
The Story So Far
What happens when you drunkenly visit your favourite childhood restaurant one night
20 years on? You shout “I can bring this stuff back, but better!” at the top of your lungs
of course. Well you do if your name is Simon Mitchell and you’ve just gone back to TGI
Fridays. Simon, personal chef to heavy rockers Metallica, started Skins, the revival of the
loaded potato skin by hosting pop ups in late 2015, before settling into a comfortable
stint at one of London’s favourite street food markets, Maltby Street. From here, the
offering of crispy loaded potato skins filled with sumptuous fillings like the Fleetwood
Mac & Cheese and the Mighty Mexican started to attract attention from the masses, as
well as Time Out and Metro Newspaper.
Notable Menu Options
Fleetwood Mac & Cheese with crispy onions, bacon, jalapenos and sriracha butter
Beet It with beetroot risotto, crispy roots, crème fraiche and parmesan
Cool Stuff
All “waste” potato from these guys gets made into mash for local homeless folk. Nice.
Skins have teamed up with Street Food King “The Ribman” to produce a Ribman Skin,
containing the Ribman’s signature pulled pork rib. Say whaaaaaaaat.
